summer squash! (or whatever those long bumpy yellow dudes are called)
cut squash in half and scoop out seeds (save seeds for roasting or planting.) cut some slits across the flesh and rub both halves completely in olive oil, put on baking sheet flesh-side up, and sprinkle with salt, pepper, and wonderful dried garden oregano. bake for 45-60min, or until flesh is soft and skin is a bit bubbly. If desired, slather in butter and season with more salt.
alternately, cut squash in slices, oil, and bake for 20-30min until almost done; crack whole eggs overtop (seasoning with salt and pepper)and continue to bake until eggs are cooked. top with grated cheese of your choice.
